Sounds like a great idea! I'm based in Australia (Melbourne) so unfortunately quite a time difference from Europe. I spend a lot of my time in meetings so my availability in business hous varies, but happy to vote on slots if we run a poll.
The good news is that I'm usually available late afternoons and am happy to chat after hours even as late as 11pm.
I've seen colleagues use rallly.co - free webapp for voting on slots which doesn't need a sign up etc. Might be worth a go here?

Hi all,
As grout is starting to get some users, I would like to organize a
video call to gather direct feedback from contributors. The goal is to
gauge where people would like the project to go, identify gaps, and
perhaps prepare a roadmap.
The call could also be a good opportunity to do some high level Q&A if needed.
NB: This will *not* be a place where we discuss technical details
about a patch or bug. If needed, we'll organize separate events.
Let me know if you're interested and provide a few free slots so I can
determine the best time & date.
We'll decide later whether this should be a recurring meeting.
Cheers
